Cucumber and Jicama Salad

If you want to amaze your guests, do it with this simple tostada with cucumber and jicama salad.



1 Jicama, spiralized

1 Cucumber, thinly cut

1 Lime, cut into wedges

1 Lime, juiced

1/4 Cup of Cilantro, chopped

10 Grape tomatoes, halved

4 Large tostadas

Garlic Salt to taste

2 Avocados, smashed

1 Tablespoon of Simple Foods Avocado Oil

1 Jalapeño

2 Mini Sweet bell peppers, cut into thin slices

1/2 Red Onion, spiralized


1. Place the cucumber, bell peppers, jicama, and red onion together in a bowl. Mix in the Simple Foods Avocado oil and lime juice until combined, and refrigerate for about 20 minutes until chilled.

2. Season the avocado with garlic salt and spread it on the tostadas. Top it with the cucumber and jicama mixture and grape tomatoes. Garnish with cilantro and serve with lime wedges and jalapeño.
