Mexican Rice

Want to make something special to commemorate Mexico's Independence Day? Check out this easy and fast Mexican rice recipe.



 






INGREDIENTS:


A pinch of cayenne pepper

1/4 teaspoon of ground cumin

1 teaspoon of salt

1/2 cup of tomato sauce

2 cups of chicken stock

1 cup of rice

2 minced large cloves of garlic

1/2 chopped medium onion

1 tablespoon of Simple Foods Avocado Oil








RECIPE:

1. In a pot cover the bottom with the Simple Foods Avocado Oil. Cook and stir the onion for about 4 to 5 minutes or until soft. Add the garlic and cook it for about 30 seconds until fragrant.

3. Add the rice to the pot and mix it until coated with oil and lightly browned. Pour in the chicken stock and stir any browned bits off the bottom of the pot. Mix in the cayenne pepper, cumin, salt, and tomato sauce.

4. Put on a lid and put the heat on low, let it cook for 15-20 minutes, stir occasionally until rice is fully cooked.
