Happy belated Chinese New Year! 2023 is the Year of the Rabbit, one of the 12 animal signs of the Chinese zodiac. The sign of Rabbit is a symbol of longevity, peace, and prosperity in Chinese culture. 2023 is predicted to be a year of hope. Rabbits (people born in a year of the Rabbit) are believed to be vigilant, witty, quick-minded, and ingenious... and hopefully, they love fried rice!
INGREDIENTS
2 tablespoons of Simple Foods Safflower Oil
2 tablespoons of Soy Sauce
1 cup of frozen peas and carrots (cooked and drained)
2 cups of steamed rice
Ground pepper to taste
Sea salt to taste
2 eggs
1 clove of garlic
2 whole green onions
RECIPE
1. While the rice is cooking, prepare the ingredients. Beat the eggs with sea salt and ground pepper. Mince the garlic and slice the green onions.
2. When the rice is almost finished cooking (about 5 minutes left), heat a tablespoon of Simple Foods Safflower Oil in a large skillet or wok and add the green onions and garlic. Then, add the beaten eggs.
3. Push those ingredients to the edges of the pan and add the other tablespoon of Simple Foods Safflower Oil. Add the cooked rice and mix everything together. Add the cooked peas and carrots and the soy sauce. Mix everything together until heated through and well combined.
You can add steak, salmon, chicken, or shrimp to your rice; or serve it as a side to a complete meal.
