Roasted Veggies with Burrata


6 Cooked Beets

6 Carrots

¼ cup Simple Foods Avocado Oil

Salt to taste

16 oz of burrata cheese

Ingredients Dressing

2 Teaspoons Honey

1 Garlic Clove Minced

4 Teaspoons of White wine vinegar.

4 Tablespoons Simple Foods Avocado Oil.

1 Tablespoon of Rosemary


  1. Pre-heat the oven to 425 F.

  2. Peel and slice the beets.

  3. Peel and cut the carrots in thin slices.

  4. In a sheet pan put the beets and the carrots, add the Simple Foods Avocado Oil and salt to taste.

  5. Bake for 20 min.

  6. Remove from oven.

  7. Place on a serving dish.

  8. Make dressing and add the dressing and burrata to the serving dish.

  9. Mix ingredients until well combined.
