Carrot Soup



½ onion minced

1 garlic clove

5 Carrots

6 Cups of Chicken broth

2 tablespoons pine nuts

2 Tablespoons Simple Foods Safflower Oil.

½ teaspoon of parsley for garnish

Salt and pepper to taste.


  1. Over low heat toast the pine nuts.

  2. Add the Simple Foods Safflower Oil and sauté over Medium heat the carrot, onion and garlic.

  3. Add the chicken broth and simmer for 20 minutes.

  4. Blend the soup with 1 tablespoon of pine nuts.

  5. Season to taste.

  6. Garnish with parsley, Simple Foods Safflower Oil and pine nuts.
